Definido Branco 2022 is an exceptional white wine from the Dão region, sourced from ancient vineyards aged between 100 and 120 years. These venerable vines, spread across various sub-regions, comprise a diverse array of indigenous grape varieties, including Encruzado, Malvasia Fina, Uva Cão, Rabo de Ovelha, Branda, Barcelo, Douradinha, among others. The high-altitude vineyards, situated between 400 and 700 meters above sea level on granite-rich soils, impart a distinctive minerality and freshness to the wine.
The grapes were hand-harvested in September, ensuring optimal ripeness and integrity. Upon arrival at the winery, they underwent a meticulous selection process before being gently pressed using a pneumatic press. The extracted juice was then transferred by gravity to temperature-controlled vats for natural clarification over 48 hours. Fermentation and subsequent malolactic fermentation took place in historic cement vats dating back to 1962, a method chosen to preserve the wine&s purity and authenticity. The wine matured for 11 months in these same vats, allowing it to develop complexity and depth without the influence of oak.
In the glass, Definido Branco 2022 presents a pale citrus hue, crystalline and inviting. The nose is marked by a pronounced freshness and minerality, reflecting the exceptional terroir of its origin. Aromas of sea breeze, white flowers, and subtle hints of algae intertwine, creating a complex and seductive bouquet. On the palate, the wine is tense and vibrant, with a slight creaminess balanced by a well-integrated acidity. Flavors of white blossoms and a touch of salinity lead to a long, elegant finish, suggesting significant aging potential.
