Quinta do Lagar Novo Vindima Tardia 2007
The grapes were increasingly dehydrated and over-ripened and many berries already in raisins
the time had come for the vintage.
Vinified at low temperatures, in destemmed tanning, exclusively with indigenous yeasts. Fermentation took place slowly over 3 months and due to the saccharin richness of the grapes, it stopped naturally when the wine - still with enough residual sugar - reached the alcoholic strength of 15% Vol.
It turned out to be very interesting right away - Nature, in the Lagar Novo, had just promoted its magnificent originality.
A tuning that only good oak casks and aging time give.
